Here’s a quick tip from one mom to another:
Leeks are best pan fried!
Added here is 1 leek, small onion, 3 cloves of fresh diced garlic, and kale (at the top of the picture), which I finely cut and added in! Throw this into soups, stirfrys, stews and sauces! I also add the same mixture to my “spinach” layer in lasagnas. So very healthy, full of flavour, and kids won’t know!
Make this with any Souptacular soup – but I recommend the Lentil Lovers or Autumn Harvest.
At the end, I added chicken, macaroni, orzo pasta and fresh diced carrots.
