Vegetarian (Easy!) Pasta Sauce

sauceingredientsYou probably have all these ingredients in your kitchen right now. The secret is to cut onion, spinach stems, and red pepper very small. It’s all about texture!

1. Add olive oil to your pan, and fry: diced onion, 3 cloves garlic finely minced and diced pepper (any colour).
2. Add shredded carrot and diced spinach stems – save the leaves for a salad.
3. Add 2 cans of tomato sauce (transfer to a pot if you need the space).

Secret Ingredient: 1 teaspoon of cinnamon (inspired by Greek sauce recipes)SauceFinished

Lightly boil for about 1 hour until carrots begin to breakdown while you prepare your pasta.

Garnish your pasta dish with a sprinkle of parmesan or romano cheese and cherry tomatoes!
